To mark World Sake Day on 1 October, Nobu London Old Park Lane has unveiled an exclusive sake and sashimi pairing menu that will be available for a limited time only, running from Wednesday 1 October through Sunday 5 November 2025.
The menu has been carefully curated to showcase three exceptional sakes from the historic Hokusetsu Brewery, each thoughtfully paired with one of Chef Nobu Matsuhisa’s most iconic sashimi creations. Designed to highlight the delicate artistry of both sake and sashimi, the experience offers guests an intimate journey through flavour, tradition, and craftsmanship.

Chef Nobu’s enduring relationship with Hokusetsu Brewery began decades ago, when he was first introduced to a bottle that instantly captivated him with its elegance and balance. What started as admiration soon grew into a lasting partnership. Founded in 1817, the family-run Hokusetsu Brewery is located on Sado Island in the Sea of Japan. The brewery’s name, “Hokusetsu,” meaning Northern Snow, reflects the pristine and ideal brewing conditions of the island’s cold winters. The sakes produced here are renowned for their clarity and refinement, owing in part to the brewery’s innovative Hikari centrifuge process.
