Galvin La Chapelle Hosts One-Night-Only Chef Exchange with Executive Chef Arturo Granato and Tom Booton 

On Tuesday 24 March from 6:30pm, Michelin-starred Galvin La Chapelle will host a one-night-only chef exchange bringing together two of the UK’s most distinctive culinary voices: Arturo Granato, Executive Chef of Galvin La Chapelle, and Tom Booton, ahead of the opening of his first independent restaurant following his tenure at The Grill at The Dorchester. 

Hosted by owners Chris and Jeff Galvin, the collaboration celebrates shared values of craft, mentorship and flair, offering diners a rare opportunity to experience Tom Booton’s creative style alongside Granato’s refined Mediterranean-led cuisine within one of London’s most iconic dining rooms.  

Arturo Granato, an award-winning Italian chef with over two decades of experience in Europe’s leading Michelin-starred kitchens, has led Galvin La Chapelle since 2022, retaining its Michelin star and three AA Rosettes. His cooking is defined by precision, balance and elegance, shaped by formative years at restaurants including The Greenhouse and Hotel Bauer in Venice, and refined through leadership roles at Club Gascon and Avista.  

Joining him in the kitchen is Tom Booton, whose bold, contemporary approach to British cooking has earned him a reputation as one of the UK’s most exciting chefs. Tom began his career at just 15 and went on to work under Alyn Williams, Andy McFadden and Ollie Dabbous before becoming head chef at The Grill at The Dorchester in 2019. In 2023, the restaurant was reimagined as The Grill by Tom Booton, reflecting his personal style: confident, informal and ingredient driven. Since leaving The Dorchester in August 2025, Tom has been developing his first independent restaurant, set to open in 2026. 

The menu reflects this meeting of minds, with both chefs contributing dishes that showcase their individual identities while creating a cohesive dining experience. 

The evening opens with a series of refined snacks, including a Scottish lobster roll, reworked by Arturo as a soft bao bun, lightly spiced with piment d’Espelette, followed by a delicate Courgette and lemon verbena soup, served in an espresso-style cup – a nod to Tom’s preference for light, aromatic openings. 

Bread is always centre stage at La Chapelle: A Potato and thyme sourdough from the Galvin bread house is served with roasted yeast butterA chilled starter is designed by Arturo. An Orkney scallop and gambero rosso ballotine is paired with guanciale and a bright cedro dressing, delivering balance and finesse, while Tom’s warm starter of Quail with pearl barley risotto, wild garlic and spring onion salad reflects his love of texture and seasonality, light, fresh and quietly complex. 

The main course is Tom Booton’s signature and perhaps a sneak preview of what’s to come at his forthcoming restaurant: a Three-layer pork and mushroom pie, cut into a triangle and served with charcutière sauce, shallots, gherkins, beer-pickled mustard and stuffed morels, served alongside a chilled White asparagus and Jersey Royal salad with Italian leaves including radicchio.  

Dessert reflects La Chapelle’s Michelin credentials and elegance, with a Manjari chocolate rocher layered with gianduja and hazelnut praline, finished with a toffee and passion fruit sauce. Coffee and petit fours to follow. 

This event is a once-in-a-lifetime opportunity to experience two class act chefs, in the kitchen together – combining their individual style, techniques and passion for cooking. A sommelier-chosen wine pairing is also available to elevate each course for an additional £75.00 per person.

The dinner is priced at £125.00 per person, including a glass of champagne on arrival.
