Introducing Bistro Sablé a New French Bistro in Islington
Bistro Sablé is the kind of restaurant every neighbourhood hopes to have: confident without being showy, rooted in culture yet entirely at ease with itself. Tucked away on Canonbury Road in Islington, this French bistro from Noble Inns (the group behind the much-loved Pig & Butcher) delivers classic cooking, thoughtful wines and an atmosphere that invites you to linger – qualities that secured its place among my top three restaurants of the year.
From the moment you step inside the 65-seater space, it’s clear this is a bistro that understands atmosphere as much as food. Guests are greeted first by the bar area, a convivial pocket of stools, tables and chairs that gently encourages an aperitif before dinner. The main dining room stretches laterally beyond, dressed simply but elegantly with crisp white tablecloths, classic bistro chairs and comfortable banquette seating. An open kitchen runs along the back wall, adding warmth and a reassuring sense of theatre without ever feeling intrusive.

The interiors lean wholeheartedly into French bistro chic without tipping into parody. Multiple trips to Parisian flea markets have paid off: witty sketches and cartoons line the whitewashed walls, while polished copper pans and an original “Boucherie” sign add authenticity. It all feels collected rather than curated, stylish, playful and entirely at ease with itself.
The menu is succinct, seasonal and reassuringly classic. This is French bistro cooking without fuss, where quality ingredients and confident technique do the heavy lifting. On our visit, we began with sardines and coquille Saint-Jacques, both beautifully executed and a reminder of how satisfying simplicity can be when it’s done well. French-inspired cocktails set the tone early on – balanced, elegant and ideal for easing into the meal.
The highlight, though, was the côte de boeuf special. Cooked perfectly and meant for sharing. Paired with a beautiful red wine from the predominantly French list, curated by former Mere head sommelier Alex Corvez, it was bistro dining at its most indulgent and convivial. The wine offering deserves special mention: 95% French and available in flexible formats from 75ml pours to carafes and full bottles, making it as approachable as it is thoughtful.

Dessert was non-negotiable, and rightly so. The Valrhona chocolate mousse with cherries was insanely rich, deeply satisfying and the perfect full stop to the meal. Elsewhere on the menu, depending on the season, you’ll find stalwarts such as moules marinière, pâté en croûte, confit duck leg and pan-fried cod, alongside classics like vanilla crème brûlée. Sundays see Bistro Sablé lean into its Anglo-French identity with “Les Rosbifs”: traditional Noble Inns roasts, properly garnished and served from midday until 9pm.
Out front, a sheltered garden space promises year-round appeal, whether in mild autumns or hot London summers, complete with greenery, heaters and shade to encourage lingering.
Ultimately, Bistro Sablé is the neighbourhood bistro we all want on our doorstep. Whether you’re popping in for a drink and a light bite, settling in for a lazy lunch or stretching out a long, indulgent evening, it offers the simple pleasure of eating, drinking and socialising with ease.
