Galvin Bistrot & Bar Hosts One-Night-Only Chef Exchange with Arturo Granato and Nathaniel Mortley of 2210 by NattyCanCook
On Tuesday 7th of July from 7pm, a Shoreditch favourite, Galvin Bistrot & Bar, will host a one-night-only chef exchange, bringing together two of the UK’s most exciting chefs: Arturo Granato, Chef Director of Galvin Restaurants and Chef Nathaniel Mortley of 2210 by NattyCanCook.
Chef Nathaniel Mortley, better known as NattyCanCook was raised in Peckham, South London, where he developed his passion for cooking at an early age. After training at Lewisham College, he went on to work in leading London kitchens including Oblix at The Shard and City Social. Following a period of personal adversity, he refocused his career, working as a sous chef within a prison culinary programme at HMP Brixton.
He later built a strong social media following through brand collaborations and a successful residency at The Greyhound in Peckham, earning recognition as a Condé Nast Traveller “One to Watch” in the 2025 Top New Restaurant Awards. He has since opened his debut restaurant, 2210 by NattyCanCook, which has already earned a spot in the Michelin Guide. Here he showcases a bold, flavour-driven take on modern Pan-Caribbean cuisine and he has strong ambitions to earn a Michelin Star.
Hosted by restaurateurs Chris and Jeff Galvin, the evening will bring together two chefs with distinct yet complementary culinary identities. Guests will enjoy a menu that blends Mortley’s elevated pan-Caribbean cooking with Granato’s elegant, Mediterranean-influenced approach, all set within the warm, home-from-home atmosphere of Galvin Bistrot & Bar.
Arturo Granato, an award-winning Italian chef with over two decades of experience in Europe’s leading Michelin-starred kitchens, has been at the helm of Galvin Restaurants since 2022. His cooking is defined by precision, balance and elegance, shaped by formative years at restaurants including The Greenhouse and Hotel Bauer in Venice, and refined through leadership roles at Club Gascon and Avista.
The menu opens with snacks by Arturo Granato, including English beef tartare tartlet with oyster emulsion and finger lime, alongside a Red pepper beignet with capers and stracciatella.
For the starter, Nathaniel Mortley presents a Hand-dived scallop with burnt green mango. Featuringpickled cucumber salsa, the dish is elevated with coconut and all-spice espuma, Scotch bonnet herb oil, and a cassava and coconut tuile, bringing layered heat, brightness and texture to the dish.
For the fish main, Granato follows with Cornish red mullet with clam velouté, pickled datterino tomato and samphire, showcasing his refined, produce-led European technique.
For the main course, Nathaniel Mortley serves Aged lamb loin and curried pressed lamb neck. This dish is accompanied by brown butter cauliflower purée, glazed heritage carrot, Caribbean-spiced puffed wild rice crunch, pickled kohlrabi with green strawberry, and a sorrel jus, delivering layered spice, richness and bright acidity.
Dessert makes a dazzling return to Granato’s refined style with a vibrant Amalfi lemon burnt meringue tart, paired with a refreshing coffee granita – an irresistible finale bursting with brightness and aromatic flair. For those looking to elevate the experience a sommelier-led wine pairing is also available.
Galvin Bistrot & Bar, located in the heart of Spitalfields, offers a relaxed Mediterranean escape in the heart of the City, with a warm, neighbourhood feel.
