Bespoke Bites

We have a quickfire 10 minute interview with Vicki Idowu, she is a 23 year who runs her own food business called Bespoke Bites. Vicki has also shared a quick recipe with us to get all you foodies cooking. Get inspired and happy reading.

What part of London are you from and when did you first start loving food?
I am from South East London. I always loved food, but when I really knew that I wanted to make a career out of it was when I went to uni and I had to cook for my friends, that’s when I really fell in love with food.

What or who inspires you as a chef?
Gordon Ramsey and Nigella Lawson are two people that I admire and one day aspire to be like. I want people to love and enjoy food as much as I do.

What made you turn your love of food into a business?
I wouldn’t say I’ve turned my love of food into a business, the kind of chef I want to be is a pastry chef, I have started my own company called ‘Bespoke Bites’ which one day I want to turn into a catering company. I want to be the Heston Blumenthal of the dessert world. Maybe in the future I can turn it into a business where I not only do pastries, desserts, breads and other baked goods.

How long have you been in business and what kind of people or events do you cater for?
Just under a year, I’m still learning and progressing which is exciting. I catered for the cast and crew of on-line web series ‘Brothers with no game’ it was fun. I had never done anything like that before so it just allowed me to see what it would be like if one day I turned ‘Bespoke Bites’ into a catering company which also did main courses etc

What’s your favourite dish to make?
I love lamb, I make it all the time, but my favourite has to be. Lemon, pepper and garlic chicken with a red pepper sauce served with baby potatoes and Mediterranean veg. I absolutely love it, trust me. Its a crowd pleaser lol.
Can you give us a 5 min recipe for our readers?
Yep, I one saw this recipe on-line and I fell in love with it.

Chocolate mug cake. An easy way to make chocolate cake in the microwave

2 1/2 tablespoon of all purpose flour
2 1/2 tablespoon of granulated sugar
1 tablespoon of sifted cocoa (I used Galaxy hot chocolate)
1 egg
1/2 tablespoon of vegetable oil
1 1/2 tablespoon of milk
1/4 teaspoon of vanilla extract
1 tablespoon of chocolate chips (I used white chocolate chips)
1/4 teaspoon of baking powder

Mix all the ingredients together, minus the chocolate chips. Pour the batter into your chosen mug(should be enough batter to fill a 300ml mug)
Sprinkle the chocolate chips on top and put in the microwave for 3 1/2 minutes.

I always look at recipes on-line and take inspiration from it, switch it up and remove and add my own ingredients. Try and test my own thing because you will never know if it tastes good unless you try.
