Learn to make the most delicious, authentic and fragrant Thai dishes
You may well have passed by Borough Kitchen on the high street of Hampstead several times. From the outside it looks like a cookware shop, right?
That is correct, but did you also know they run an absolutely fantastic cooking school in the evenings? With a full range of classes to choose from, you’ll struggle to pick between the diverse options. We decided to opt for the Foundations of Thai Cooking Class – as a cuisine I find particularly hard to cook from scratch – often opting for the sugary, salty store bought sauces.
In this hands-on class, you’ll learn the art of making Thai curry paste from scratch and gain an in-depth understanding of key Thai ingredients and their usage, like fish sauce, kaffir lime leaf, tamarind puree, shrimp paste, and more.

The class started off with some essential knife skills before taking us through various cooking methods and seasoning tricks to improve flavour in Thai food and beyond. Each stage was well narrated and guided, and we swiftly learnt a lot about the balance of flavours – something I now know I was getting very wrong before taking this class.
We started off creating a Thai green curry paste from scratch which was infinitely more flavourful and healthier than the shop bought alternative. To this paste we added a range of seasoning and spices to create the distinctive green curry flavour, and added fresh prawns. Perhaps one of the most useful lessons taken away from this class was the art of creating the most perfect and fluffy jasmine rice.
During the class, we also learned how to cook a whole-baked sea bass, alongside a crunchy salad with satay sauce which was truly delicious and incredibly easy to make, once all the instructions were broken down for us.

The class was fun, sociable and incredibly educational. Priced at £125.00 per person, it would make a fantastic gift that the recipient would cherish for a long time after. As well as the dishes we created, we left the class with valuable new cooking skills that you can carry across multiple cuisines – giving you the confidence in the kitchen that is needed to have fun and experiment. The class is also BYO, so ensure to bring along a nice, crisp white wine to enjoy with your dishes at the end.
