GAIL’s Launches its 2025 Festive Range: A Celebration of Seasonal Baking & Thoughtful Gifting
This Christmas, GAIL’s is celebrating seasonal baking and thoughtful gifting through a collection that is made for giving.
Visitors to the bakeries will find familiar favourites back for the season, along with new recipes baked with care and designed to be shared. Available in bakeries and online, bags of biscuits, large loaves of bread, boxed panettones, seasonal preserves, and festive pastries.

Savouries & Sandwiches
Back by popular demand, returning favourites include the Turkey, Chestnut & Ham Hand Pie and the Smoked Turkey & Swiss Cheese Sandwich.

The Ham, Cheese & Stuffing Croissant takes GAIL’s much-loved classic to festive heights – filled with bechamel and topped with a redcurrant BBQ sauce. Available daily from 11am.
Sweet Treats
Much loved festive favourites are back including Christmas Buns, Iced Penguin Biscuits and Classic Mince Pies made with sweet Jonagold apples, Calvados, vine fruits, cranberries and candied citrus peel.
Mince Pies will be served in select bakeries warm with clotted cream, alongside individual ones or as a gift box of six (shop here) – easy to pick up on the way to a festive gathering.
New to the baker’s table for 2025, two seasonal bakes that celebrate the season:

Cranberry, Whisky & Brown Butter Ecclefechan Slice – a rich, festive take on the Scottish classic. It is a fruit-laden and butter-rich slice with seasonal cranberries, sour cherries, glacé cherries and a biscuity shortcrust pastry. The GAIL’s take adds brown butter, Scottish whisky, pecans and almonds. Rich, fudgy and fabulous with any hot drink, the Ecclefechan is a great mince pie alternative.

Chai & Pistachio Cookie – delightfully chewy, with an oozing tea-infused, white chocolate ganache centre. Baked and boxed, these cookies make a beautiful Christmas gift for anyone particularly attached to their afternoon (and morning, and evening) cup of tea. Baked with heritage grains and Diaspora Co.’s chai masala blend, with perfumed cardamom, sweet fennel seed, complex cinnamon, fiery black pepper and warming cloves.
Seasonal Hot Drinks
This year, there are two new seasonal drinks available:

The Holiday Filter – with notes of boozy chocolate, ripe fruit, and a syrupy sweetness, designed to complement the festive bakes and paired perfectly with the Panettone and Mince Pies. Available in select bakeries.
Hot Cocoa – made with cocoa powder and designed to reframe this often-overlooked ingredient as delicate, quietly complex, and naturally sweet.
