Homemade Beans on Toast

Saturday night in our household back home is beans on toast night, which we happily munch while watching something awful like X Factor or Strictly Come Dancing.

However home means an abundance of ingredients which I don’t usually have access to living out of the parents abode. Therefore I though what better time to make HOMEMADE beans on toast. You could see the scepticism on mother G’s face when I stated this my cooking can be a little hit and miss (a recipe the other day let the folks intermittently on the loo, how was I to know it would be so spicy??)

However I persevered and it turned out AMAZONG (one step up from amazing) if I don’t say so myself! (I’m always a little surprised when things actually work!) and it was all thanks to one chap. Tom Kerridge. We adapted his recipe so we could use canned beans, as we didn’t have time to soak our bean overnight!

So here is how to wow your guests with a simple supper, you can even make your own bread (Tom made proper soda bread in his recipe. We made ours, it was so much work…….putting bread mix and water in he bread machine…….)

Tom Kerridges Homemade Beans on Toast

Serves four to six

– 400g canned white beans, such as haricot (cannelloni beans are cheaper!)
– 5 tbsp rapeseed or sunflower or vegetable oil
– 200g smoked streaky bacon in one piece, diced
– 200g chopped onions
– 2 garlic cloves, grated
– 2 x 400g cans chopped tomatoes
– 2 tbsp tomato purée
– 150g soft dark brown sugar
– 200ml red wine vinegar
– 500ml water
– Salt and pepper, to taste

Heat the oil in a large saucepan, then add the bacon and fry until crispy (and the fat is all crunchy). Leave the yummy bacon juice in the pan and add the onion and garlic, fry until soft.

Add the canned tomatoes, tomato purée, sugar, vinegar and water and bring to the boil, stirring to dissolve the sugar. Add the beans, reduce the heat to very low and leave to simmer, uncovered, for 1½ to 2 hours until the sauce is thick and the beans are soft. Add salt and pepper to taste.

When ready toast your bread and lather in real butter (love a bit of Lurpak) and serve with a fried egg and cheese on top!
