CAHOOTS AND THE BOTANIST GIN TO POP UP IN SUSTAINABLE COLLABORATION AT COCKTAILS IN THE CITY

This April, the popular Soho underground cocktail bar, Cahoots, which is set in a disused tube station from the 1940s, has teamed up with The Botanist Gin, artisan handcrafted gin from Islay, to offer a one-of-a-kind drinking experience to Cocktails in the City attendees.

Cahoots, is an amazing venue which is inspired by true events that took place in post-war Britain. This time they will bring the era’s illicit and nocturnal escapades back to life this Spring at the Waterloo Vaults.

They’ve teamed up with The Botanist Gin, an Islay Dry Gin comprised of 22 hand-foraged local herbs and flowers distilled with nine classic gin botanicals. Cahoots have certainly transformed the vaults space into an underground victory garden – called The Botanist Below Ground. They’ve done this by upcycling  the materials of an abandoned station to grow and supply fruit, vegetables, and herbs to fellow scoundrels.

Victory Gardens, utilised in the 1940s along with rationing stamps and cards to reduce the pressure on the public food supply. These gardens also boosted morale and gave farmers and gardeners the opportunity to contribute to the labour force and be fulfilled in their efforts of civic responsibility. In Britain, digging for victory was often done on waste ground, railway edges, or ornamental gardens and lawns, while sports fields and golf courses were requisitioned for farming or vegetable growing.

Only true scoundrels of the vaults will uncover the self-sufficient micro farm growing the finest local herbs and flowers that lie behind the frontage of an innocuous looking green grocer store. The two brands have come together under the same ethos of discovering the wild side of life to create a sustainable stall at the bi-annual cocktail celebration, with a stand that produces zero waste by using edible cocktail sachets and does not use any plastic. All materials used are either recycled or upscaled materials

The secret botanical farm, using upcycled, sustainable materials and maintaining a dam environment will be home to various different herbs and botanicals being grown for their later use in illicit cocktail concoctions. The stand will also have an immersive component, allowing visitors to pick their own botanicals and garnishes, and a visit to the stand will also include exciting entertainment in true Cahoots style.

Cocktails will include the Botanist Brew, made with The Botanist Gin, allotment mix, rocket tincture, lemon, elderflower soda, the Gin O’Clock which will feature The Botanist gin, Amontillado sherry, cucumber cordial, fresh ginger, lemon, orange bitters, and a non-alcoholic mocktail, Green Fingers, made with refreshing citrus and basil sherbet, lime, and topped with Fentimans light tonic water.

We visited last night and got to sample some of these beautiful cocktails. Safe to say they were amazing.
