Comptoir Bakery Workshop Review
I LOVE baking, so jumped at the chance to try one of Comptoir Bakery’s workshops when we were invited to visit.
The bakery is located between Bermondsey and London Bridge, just behind Maltby Street Market, and has a really warm and welcoming atmosphere.
Whilst I love eating out and catching up with friends over good food and drinks, a baking masterclass was a great way for us to chit chat whilst honing our skills in their Tartlette Workshop.
The chef started by talking us through each step of how to perfect sweet pastry for our tartlettes. I’m used to using a mixer, but it was really great to try and do everything by hand, and I’m pretty happy with how my pastry turned out!
As the pastry needs more time to chill and set than we had, we were able to take ours home and were given a ‘here’s one I made earlier’ to bake with during the class. We were then shown how to make the Almond Paste and Creme Patisserie for our fillings; both of which I’d never made before.
Then came the delicate assembling of our tartelettes…The four variations we made were Almond and Apricot, Bakewell, Strawberry and Creme Patisserie and my favourite, Lemon Meringue. I’m such a perfectionist, so found the piping on each of them quite tricky to keep a steady hand, but by the end I think they looked good (even if I couldn’t sell them off as professional!)
On tasting them all, the pastry was crisp and the flavours were all fresh and sweet – and they definitely didn’t last very long!
The chef and sous chef were all so helpful and knowledgeable, and I’m really excited to use the apron and recipes to recreate the tartlettes from my own kitchen!
