Four Hands Supper Club At The Bountiful Cow Review
This summer, The Bountiful Cow – Holborn’s beloved, female-led steakhouse – celebrates its 20th birthday. To mark the occasion, the team has launched a brand-new chef collaboration series: Meat Masters.
The series kicked off this week with a one-off four-hands theatrical supper club co-hosted by Cveta Dukovska, The Bountiful Cow’s owner and self-taught head chef, and Ioannis Grammenos, Helios Executive Chef and Meatologist.

Designed to celebrate the quality, richness, and versatility of great beef, the special menu has nods to both chefs’ heritages and their shared respect for the produce. Cveta trained in London’s old-school kitchens before taking over the reins at the Holborn pub while Ioannis, a Greek-born chef, is the world’s first Meatologist and global ambassador for premium beef and lamb. He is known for his innovative, produce-led steak menus at London’s award-winning Heliot Steak House and opened the country’s first School of Meatology.
The meal was served in a communal style, with around 4 people per table. Every dish was expertly prepared and delivered to a high standard. To start we had British Beef Tartare inside a roasted bone marrow canoe, with white truffle, capers and shallots. A few years ago, I wouldn’t have even tried this, but now I gladly dug in and I’m glad I did. My friend and I enjoyed the Mediterranean inspired Grilled Octopus and Fava Beans with aged vinegar, chilli and creamy fava purée. We also both liked the take on the traditional Greek salad. The salad is made with fresh heirloom tomatoes, feta, marjoram and warm sautéed beef with a red wine reduction. It was very satisfying.

Next was the Truffle Chicken with wild mushrooms and summer truffle cream. Those who know me know I’m not a mushroom fan-and another diner on our table wasn’t either- but after finishing the dish we both agreed the mushrooms were delicious, and we’d have them again. It was a rustic comforting dish.
Presented under a cover, the Smoked Côte de Boeuf released steam upon unveiling. The herb crust added a fragrant, well-seasoned layer, while the chimichurri provided was bright and zesty. Our only complaint is we wanted more it was that good!

Dessert was surprising in the best way- Sticky Toffee Pudding finished with lime, Sichuan pepper and fresh berries. It wasn’t sickly sweet like a traditional toffee pudding but balanced with the acidity of the berries. Paired with wine it went down a treat.
Tucked away near Holborn Station, The Bountiful Cow has a bar and seating upstairs, with more tables downstairs. The wooden panelling and vintage cowboy posters give it a relaxed, welcoming vibe. Overall we were very impressed and had a lovely evening. We’ll be back!
The dishes are available as a month-long limited-edition menu throughout August.
