How to make a Snicker Cupcake
This recipe is to make 12 Snicker Surprise Cupcakes
Ingredients
For the cupcakes:
200g plain flour
2tsp baking powder
1/2 tsp salt
185g caster sugar
150ml milk
2 free range eggs
150g unsalted butter
1tsp vanilla extract
2 snickers bars sliced into 12 pieces and frozen
For the chocolate buttercream:
100g unsalted butter
225g sifted icing sugar
2tbsp cocoa powder
What to do
Preheat the oven to 180c/gas mark 4 and either grease a 12 hole muffin tin or line with cases. Sift the flour, baking powder and salt into a mixing bowl and stir in the sugar
Whisk together the milk, eggs, butter and vanilla in a separate bowl, then pour into the dry ingredients. Stir until only just combined
Spoon into the tins to half-fill them, then place a piece of snickers bar on top of the mixture. Cover with more mixture
Bake for 10-15 mins until risen and firm. Cool in the tins for 10 mins, then place on a wire rack to cool completely
For the chocolate buttercream, beat the butter until very soft. Sift in the icing sugar and cocoa and beat well until smooth. Pipe or spoon the icing onto each cupcake
