Nine Lives – A zero waste cocktail bar

Set in the heart of the city, in a Victorian basement neighbouring London Bridge, a new kind of cocktail bar, Nine Lives, will open its doors on the 16th June. Brought to you by the folks behind renowned drinks agency Sweet&Chilli, Nine Lives will be driven by a ‘waste-nothing ethos,’ bringing sustainability to an industry that’s assumed to be otherwise. Taking an innovative stance in tackling the issue, Nine Lives will be reducing their ecological footprint in a number of ways, and during a time of rampant climate change denial, this can only be a good thing. Reusing basic ingredients like lemons to create ‘Loops’ is a prime example of how they’re going to achieve this (FYI – Loops are new drinks made from the surplus ingredients of others).

Nine Lives promises to be a place where the music is great and the drinks are even better. Expect a sensory experience here, an enveloping into the fold as this realm ‘blends seamlessly’ with your own. Its subtly opulent setting has been designed to match the Victorian heritage of the building; though we think you ought to approach the bar’s exotic and wide-ranging list of cocktails with Wildean gusto.

Making their sustainable statement of intent possible is no mean feat. In fact we’re sure that sourcing the staff’s vintage uniforms proved the least challenging venture. Ultimately, it leads us to absolutely believe them when they say that ‘Nine Lives is a total passion project.’ How could it not be?

Amongst a slew of old (and new) favourites, two of their most anticipated signature cocktails will be:
MOBY DICK – Coconut oil-washed grain whisky, with salted caramel syrup
ÔMU KOOLER – Campari with a watermelon & cucumber homemade
