One of our absolute favourite hotel hot spots is the beautiful Nobu Hotel London Portman Square situated in the heart of Marylebone. There’s a new Restaurant General Manager in town and we sat down with Rita Dreyer to find out a little more about her.
- Hi Rita, you must be super excited to head up such a lovely hotel restaurant. How are you planning to apply your prior Nobu brand knowledge to this new role?
Building on my experience at Nobu and other prestigious hospitality companies, I am eager to bring fresh perspectives and innovative ideas to this role. I have a deep understanding of our brand’s standards, complemented by industry-leading practices and insights, positioning me to make meaningful contributions to our team. My expertise will help elevate service quality and drive continuous improvement. Moreover, my academic background and hands-on experience have equipped me with a unique blend of skills that will strengthen the team’s performance and support us in achieving our goals.
- What is your management style?
My management style is rooted in fairness and transparency. I believe in creating an inclusive environment where every team member feels respected and valued. By setting clear expectations and providing consistent support, I foster a culture of open communication and collaboration.
- What new policies and focal areas will you aim to develop in your role?
Operational analytics is a key focus for me, as I continuously review current policies with the goal of finding greater efficiencies and streamlining processes. I believe there are always opportunities to improve operations and ensure smoother, more effective workflows.
I place a strong emphasis on delivering personalised dining experiences tailored to each guest. By focusing on guest profiling and building meaningful relationships through genuine, honest conversations, I aim to create memorable and unique experiences that resonate on a personal level.
I am also passionate about contributing to sustainability projects. I have always believed in the importance of caring for nature, and even the smallest effort toward sustainability brings me great satisfaction. I am committed to doing my part in protecting the environment and fostering eco-conscious practices in the workplace.
- What is your career highlight?
A major highlight in my career has been the decision to work in hospitality, even though I originally thought I would pursue a different path in life. I’ve come to love what I do, and I approach my work with great passion and dedication. It’s a decision I’m proud of, as it has brought me fulfilment and joy.

- What’s the biggest challenge hospitality is facing at the moment?
Longevity and loyalty seem to be values that are gradually becoming extinct within the hospitality sector.
- What’s your favourite thing about the Nobu brand?
Being a part of the Nobu team makes you feel like you are part of the family, like you are home.
- What do you like to do in your spare time?
I like to spend time with my family, try new restaurants, meet friends, and go to the movies.
