Recipe: Fuzzys Sweet Potato Fish Cakes

Fuzzys Fish Cakes 
Fabulous low fat, wheat and dairy free recipe. Great eaten hot or cold and packed full of goodness!!

Fuzzys Fish Cakes

Makes 9 servings
Each fish cake contains
Calories 129 per serving
Fat 0.7g
Carbohydrate 20.4g
Dietary Fibre 3.1g
Protein 10.7g

– 1 Cup of Coriander chopped
– 40g Oats (use a coffee grinder or food processor to create a flour)
– 600g Sweet potato (I prefer the white flesh variety but orange is good too)
– 1 Medium egg
– 400g Haddock Fillet
– Pinch of Maldon Salt
– Freshly Ground Black Pepper

1. Place Sweet Potatoes in the oven on a baking tray and bake in skins on 190 or gas mark 5 until soft. Allow to cool
2. Season the Haddock Fillets with the Salt and Pepper and bake following instructions above
3. Add the remaining ingredients to a bowl. Mix thoroughly
4. Add the flesh of the sweet potato to the mixture and mix thoroughly
5. Flake the Haddock Fillet and add to the mixture. Mix thoroughly
5. Using a half measuring cup divide the mix onto a baking tray
6. Flatten each cake and then bake in the oven at 190 degrees or gas mark 5 until golden
7. Serve with a green salad and enjoy!
