 Ben Tish’s Ultimate BBQ Sauce

During the 2020, I managed to find quite a few whiskys that I enjoyed and Glen Moray was one. This summer Glen Moray is encouraging people to explore the taste and versatility of whisky for outdoor drinking and dining. To do this they have partnered up with chef, author and BBQ expert Ben Tish to create some easy to make whisky recipes, including a mouth-watering BBQ sauce using Glen Moray Elgin Classic – which is available in supermarkets throughout the UK.

Glen Moray promised this rich, tangy sauce with a tasty whisky kick was easy to make and they were not kidding. It can be used to marinade steaks, baste on meats and veggies or slather on a burger before topping with cheese. If  the sauce is made well in advance, it will even boost these incredible flavours. I created the sauce to make on Dorito Crusted Cheese Burgers (Shout out on twitter if you want me to share the recipe).

To make this sauce you need:

250ml red wine vinegar

75 dark brown sugar

75ml Glen Moray Elgin Classic

75ml cola

250ml tomato ketchup

1 tsp Worcestershire sauce

1 stick cinnamon

200ml beef or chicken stock (homemade or bought in, fresh is best)

Sea salt and pepper

Place a large pan over a high heat and pour in the vinegar. Bring to the boil and then turn to a simmer and reduce by half. Add the sugar, whisky, cola, ketchup, Worcester sauce and cinnamon. Bring to a simmer and then add the stock. Again, bring to the boil and then simmer for 30-40 minutes until rich and thick. Season and leave to rest for at least a couple of hours before using, and make sure to remove and discard the cinnamon stick.

I won’t lie I may have added a tad more Whisky and skipped the cinnamon, but my guests and I enjoyed it just the same.
