Don Papa’s Valentine’s Cocktail

Bubbles are not for everyone, so if you are looking for an alternative drink to surprise and delight this Valentine’s day, Don Papa’s might just have the tipple for you.

The bittersweet ‘Don’s Duo’ is a quirky rum cocktail which pairs beautifully with dark chocolate; the perfect February 14th cocktail, whether you are sharing it with a lover or just enjoying a quiet moment to yourself. You can pick up a bottle of Don Papa for £32 from Sainsbury’s.

Don’s Duo Recipe:
45 ml Don Papa Rum
5 ml Aperol
15 ml Raspberry Liqueur
15 ml Simple Syrup
25 ml Lemon Juice
30 ml Egg White
3 drops Balsamic Vinegar
1 drop Red Food Colouring

METHOD:

Combine ingredients in a cocktail shaker without ice first, shake all ingredients to emulsify the egg white. Add ice, shake hard until thoroughly chilled. Double strain into chilled cocktail coupe. Zest with a lemon and garnish with 3 drops of balsamic vinegar (pulled with toothpick to create little hearts). Serve in a coupe glass alongside some hazelnut or chilli dark chocolate.
