Veganuary Recipe: ‘Pimped Up Caulirice’

Today’s recipe is courtesy of none other than our fave paleo food chef Gemma Callander!

Founder and healthy eating expert Gemma has created a healthy dish called ‘Pimped Up Caulirice’. Packed with natural vegetables and seasoning, this vegan dish is quick and easy to create and is the perfect introductory dish for those just embracing the vegan lifestyle.

The Pimped Up Caulirice, an original recipe created by Gemma uses seasonal vegetables and can be adapted using different ingredients whilst remaining vegan. You can see below for the full recipe.

Ingredients:

– ½ cauliflower

– 1 parsnip

– 1 carrot

– ½ bulb of raw beetroot

– 1 white onion, finely sliced

– 1 clove garlic, finely sliced

– ½ tsp nigella seeds

– 4tbsp olive oil

– Chilli flakes

– Salt and pepper

 

Method:

– Finely grate and mix the root vegetables into a bowl.

– Heat a large frying pan and add the olive oil and the nigella seeds. When the seeds start to pop, add the sliced onion and cook for 3 minutes.

– Add the root veg mix, garlic and salt and pepper to taste. Cook on a high heat for another 4 minutes.

– Remove from heat and serve immediately, sprinkling a few chilli flakes for a little heat.
