Whether you’re an American food lover or simply a mac n cheese addict, a marvel has been discovered. Mac n Cheese connoisseurs The Mac Factory have teamed up with Earlham Street Clubhouse for a weekly Saturday foodie pop-up, promising to tantalise your senses no matter which option you choose.

Tucked in a trendy basement along Earlham Street in Covent Garden lies the trendy American bar Earlham Street Clubhouse. The bar which is already well known for its smashing American themed cocktails and gigantic pizzas is branching out with friends THE MAC FACTORY to bring London a mac n’ cheese experience like no other.

The Mac Factory’s head chef and founder Graham Bradbury who has worked at: The Gerkin’s Axe, The Chancery and The Gore Hotel in Kensington, has been travelling the London street food market scene with great success. His gourmet mac n’ cheese has become the talk of the town with exquisite flavour combinations including Slow confit belly of rare breed pork teamed with wholegrain mustard jus and Sauteed wild mushrooms, truffle oil and cepe cream all topped with their signature parmesan and thyme crumble.

Mac Factory

Named Gourmet Mac n Cheese is undeniably no false promise. With four options that will play a whirlwind in your head, the hardest thing about this place is choosing which one to go for.

They ranged from:

Piggy Style

Slow confit belly of rare breed pork, cauliflower puree and florets, wholegrain mustard jus

The Big Smoke

Home smoked breast of chicken, fire roast peppers, apple wood smoked cheddar

The Mac Burger (v)

Deep fried crumbed Mac n cheese patty served on a demi brioche bun with salad garnish, chilli jam and handcut chips

The Mac-gyver Burger

All the above with a char-grilled longhorn beef patty

Ranging from a classic blend of 3 cheeses to The Big Smoke packing in all the punches, each and every pot of heaven delivers on flavour, texture, depth and lasting creamy goodness.

All Mac n cheese dishes have a mixture of Cheddar, parmesan and mozzarella and are topped with a signature parmesan and thyme crumble.

Contains gluten, dairy, mustard

Inspired by soulful American cuisine, head chef and founder Graham Bradbury has hit a gold mine. His friendly and chatty nature is so inviting, he had me mesmerized at his cooking. Watching him in his element was both mouth-watering and restless.

Alas! My Supermario was ready which was Sauteed wild mushrooms, truffle oil, cepe cream. Topped off with their signature sour dough bread, parmesan and thyme crumble, I couldn’t wait to dig in, no matter how hot!

The result: Even after trying several mac n cheeses in different states in the USA, this has to be my absolute favourite.

I cannot forget the cocktails, Earlham Street Clubhouse have created unique blends to compliment The Mac Factory dishes, why not try some of these:

Tommy MacDonald

A blend of, Jose Cuervo Tradicional, Agave Syrup, Cointreau, Lime Juice and Lagavulin, the perfect cocktail for food with that spicy kick.

Return of the Mac

Bourbon, Creme de Myrtle, Maple Syrup, Lemon Juice, Cranberry Juice

Best cocktail with The Big Smoke or even  the Piggy Style.

Mac Shack

Appletons V/X, Creme de Cacao Blanc, Wray & Nephew, Lime Juice, Mango Puree, Vanilla Syrup, Apple Juice, Guava Juice, Angostura Bitters. To be served with anything rich (truffle oil etc). This has to be my favourite cocktail and it’s a must try!
