Galvin La Chapelle Hosts One-Night-Only Chef Exchange with Chef Director Arturo Granato and Michelin Starred Tom Brown

On Tuesday 26th of May from 7pm, Michelin-starred Galvin La Chapelle  will host a one-night-only chef exchange, bringing together two of the UK’s most distinctive culinary voices: Arturo Granato, Chef Director of Galvin La Chapelle, and Tom Brown, the acclaimed Michelin-starred chef behind his eponymous restaurant at The Capital.

Hosted by restaurateurs Chris and Jeff Galvin, the evening brings together two chefs with distinct yet complementary culinary identities. Guests will experience a menu that merges Brown’s bold, ingredient-led cooking with Granato’s elegant, Mediterranean-influenced approach, set within the striking surrounds of Galvin La Chapelle.

Arturo Granato, an award-winning Italian chef with over two decades of experience in Europe’s leading Michelin-starred kitchens, has led Galvin La Chapelle since 2022, retaining its Michelin star and three AA Rosettes. His cooking is defined by precision, balance and elegance, shaped by formative years at restaurants including The Greenhouse and Hotel Bauer in Venice, and refined through leadership roles at Club Gascon and Avista.

Joining him in the kitchen is Michelin-starred Tom Brown, whose ingredient-led, seafood-focused cooking has earned widespread acclaim. Known for his refined yet creative approach, Brown’s menus celebrate exceptional produce with bold flavour combinations and technical finesse, reflecting a career shaped by his time working alongside some of the UK’s most respected chefs.

The evening begins with a selection of snacks, including Lobster Toast with lardo and crispy chilli oil by Tom Brown, alongside Arturo Granato’s Duck Liver Parfait with spicy cherries and popcorn crumb, offering a balance of richness and playful texture.

To start, Tom presents a Bream Tartare with quail egg, soy and radish, paired with 2022 Tavel ‘Vieilles Vignes’, Tardieu-Laurent, Rhône Valley, France, highlighting his signature precision and freshness.

Tom has also designed the main fish course which showcases his affinity for seafood with a Crab Custard, heritage tomatoes and wasabi, paired with 2023 Chardonnay, Danbury Ridge Estate, Essex, England, delivering a delicate yet expressive combination of flavour and texture.

Arturo Granato’s main course follows with Welsh Lamb, oyster, miso and stuffed morel, paired with 2020 Syrah, Lismore Estate Vineyards, Western Cape, South Africa, demonstrating his signature balance of depth, elegance and Mediterranean influence.

Dessert returns to Granato’s refined style with a Coconut Parfait, camomile, honey and white chocolate, paired with 2022 Château Laville, Sauternes, Bordeaux, France, offering a light and aromatic finish to the meal.

Galvin La Chapelle is a Michelin-starred restaurant set within a breathtaking former Victorian school in the heart of Spitalfields. Renowned for its elegant, produce-led cuisine, the restaurant pairs refined cooking with warm, polished service, creating a dining experience that is both sophisticated and welcoming. With its soaring arches and seasonal menus, La Chapelle is one of London’s most distinctive and celebrated dining destinations.

The dinner is priced at £125.00 per person, including a glass of champagne on arrival.
