Love Paella? Then ‘ Paella: The Original One-Pan Dish: Over 50 Recipes for the Spanish Classic’ by Chef Omar Allibhoy is the cookbook for you. 

Spain’s national dish hails from Valencia. This one pan wonder has something to offer for every occasion.  With this book Omar’s aim is to help us master the basics of making paella so we can then be as traditional or creative as we like. 

This 176 page, hardcover has beautiful photography by Facundo Bustamante. There are three sections: introduction, the master’s guide and the recipes. The introduction is about Omar and his love of cooking whilst the master’s guide provides information about the ingredients, the paella pan and the level of heat. The recipe section is divided into meat, seafood and vegetable paellas. The recipe page gives some information about the dish, how many servings , preparation time, cooking time, list of ingredients and step-by-step instructions. 

There are too many recipes to name but Paella Valencia is described by Omar as the original and the best and is the first recipe in the book. We tasted this at the launch and it was superb. 

Recipes that caught my eye were chorizo, spinach and sweet potato; chicken, pear and smoked bacon; salmon and cauliflower, aubergine and butternut squash and many more. 

Omar is the founder of Tapas Revolution, the largest Spanish restaurant group in the UK. Trained under Ferran Adria then Gordon Ramsay, Omar opened his first restaurant in 2010. His passion for Spanish food shines through his  restaurants, TV appearances and cookbooks. He has previously published the best-selling Spanish cookbook Tapas Revolution in 2013 and the acclaimed Spanish Made Simple in 2016.
