Introducing Lobos 1707

Rewind to a cold and wet Thursday evening in February and what better way to warm up that with an exclusive dinner with Lobos Tequila.

Lobos 1707 Tequila is an independent spirits producer that blends heritage and innovation. Inspired by his ancestor of the same name, Founder and Chief Creative Officer Diego Osorio launched Lobos 1707 Tequila in 2020 with backing from legendary athlete and cultural icon LeBron James. The Lobos 1707 Tequila and Mezcal portfolio is made up of five ultra-premium award-winning offerings infused with history, culture and family legacy. Last month it launched in the UK exclusively in Selfridges stores across the UK (London, Birmingham, Manchester Exchange Square and Manchester Trafford) and on Selfridges.com.
We escaped the rain at Brasserie of Light in Selfridges, where we were welcomed with a fruity tequila cocktail – a blend of Lobos tequila with raspberry and other fruity notes (which I thought was lychee, but apparently not!). The founder Diego Osorio introduced us to Lobos 1707  and gave a bit of background on what to expect from the evening – a delicious three course meal accompanied with a cocktail and shot to complement each course.
To start, I ordered a succulent fried chicken, which paired perfectly with another round of the welcome cocktail. Alongside this, was a bowl of edamame and mini mushroom and truffle arancini balls to share on the table.
Main course was a miso cod served with sharing platters of tenderstem broccoli and other green veg. Whilst I felt it needed a carb on the side, the cod was paired with a margarita style cocktail – which filled a spot that even the best of carbs couldn’t have reached! This was followed by a shot of the tequila blanco.
For dessert, I opted for an apple tart style dessert, which was served with a Lobos twist on an espresso martini and a shot of their repositado tequila. Both were the perfect way to finish a meal and I look forward to using Lobos tequila to recreate some of the cocktails from home – watch this space!

INGREDIENTS

  • 1.5oz Lobos 1707 Reposado Tequila

  • 1.5oz Rosé Prosecco

  • .5oz Fresh Pineapple Juice

  • .5oz Lime Juice

  • .5oz Simple Syrup

  • 5 Raspberries

  • Rose Water

COMPOSITION

  • Combine raspberries and lime juice in a cocktail shaker and muddle into a pulp

  • Add Reposado, pineapple juice, simple syrup and ice

  • Shake vigorously to chill and froth up pineapple juice

  • Pour cold Rosé Prosecco into a chilled coupe glass

  • Fine strain contents of cocktail shaker into glass

  • Garnish with fresh raspberries on a pick

  • Finish cocktail with a spritz or two of rose water from an atomizer
