Meat Free Monday Lunch- Spelt, Halloumi & Pea

You know the deal; Monday morning, alarm sounds, jump in the shower, drag a comb through your hair and out the door. Then at 1pm you reach into your bag to find…………nothing. That’s right lunch didnt make it out the house this morning, and aspirations of a gomret feast are instantly dashed.

If you’re anything like me, as soon as elevenses have been chomped down my mind is on lunch. So together lets make a tummy grumble busting vegetarian beastie to quell your inner hunger.

As it literally is as easy as 1, 2, 3. The night before…..

1) Grab some Ainsley Harriott ‘Creamy Vegetable Spelt’, wack on the hob with some water for 15-20 mins.

2) Cut chunks (thin are better as they go crispy!) of Halloumi, scatter in a pan with olive oil and fry baby!

3) Take your frozen peas and plonk a load in your lunchbox.
